Stachyose is a naturally occurring functional oligosaccharide, found in the highest concentration in the Chinese artichoke (Stachys sieboldii) of the Lamiaceae family. Upon entering the human body, it is directly utilized and broken down by intestinal microorganisms, promoting the proliferation of beneficial bacteria such as Bifidobacterium and Lactobacillus. It is thus recognized as a "Superior Bifidogenic Factor". Additionally, stachyose exhibits excellent water solubility, a refreshing taste with no off-flavors, and a sweetness level equivalent to 22% of sucrose.
It demonstrates stable physicochemical properties and excellent thermal stability, does not react chemically with food additives or primary ingredients, and does not alter the flavor of other components, making it an ideal functional food additive.
